Everyday Matcha Smoothie

An Everyday Matcha Smoothie is the potion that I look forward to when I’m feeling lethargic, overindulged, or just plain bleh. I’m not a morning person, so I’m likely to feel at least one of these ways on any given day before noon. As the name implies, this smoothie is easy enough to make everyday, whenever you’re in need of a boost. 

I’ve managed to pack 7 of my favorite fruits and vegetables into this yummy treat, including cucumber, lemon, and mint–the magical trio that always reminds me of going to the spa. A low or no calorie ginger ale makes this drink especially refreshing, and gives an extra dose of vibrant ginger flavor. For convenience and because I don’t like adding ice into my smoothies, I toss frozen chunks of mango into the mix. If you don’t like mango, you can add a cut Granny Smith apple instead. Everyday Matcha Smoothie

Makes 1 large smoothie or 2 small ones. 

Ingredients:

1 cup baby spinach

1/4 of an English cucumber

1 stalk celery

1/2 cup of mango (I just use frozen chunks) or 1 small apple, cored and cut into chunks

1 large slice of fresh ginger, peeled

1 Tbsp lemon juice

4-5 mint leaves

1 cup diet ginger ale or ginger beer

1 tsp matcha powder

Equipment:

blender

serving cups

Directions:

1. Toss everything into a blender and blend away for 1-2 minutes until no bits or chunks remain. Enjoy!
