Gold Medal Veggie Tea Sandwiches

Gold Medal Veggie Tea Sandwiches are a winning recipe in every way. These sammies aren’t only healthy and chock full of veggies, but their rainbow-like appeal can help to liven up any afternoon tea table. As you might notice, these colorful canapés were made with the Olympics in mind. To replicate the colors of the Olympic symbol, I used a host of veggies including peppers, olives and cucumbers. The hardest color to tackle was the blue, for which I ended up using some crushed blue corn chips.There aren’t only veggies piled atop these sandwiches–they’re mixed into the cream cheese as well. I like to continue the healthy theme by using a fiber-rich, sprouted whole grain or low-carb bread with lots of texture. A sturdy bread or cracker will make the canapés easy to pick up without softening under the weight and moisture of the veggies.Gold Medal Veggie Tea Sandwiches are perfect with a warm, inviting cup of Hojicha. The nutty character of the tea highlights the natural sweetness of the veggies and unrefined grains in the bread. Gold Medal Veggie Tea Sandwiches 

Makes about 20 small sandwiches. 

Ingredients:

{Veggie Cream Cheese}

1-8 oz. package of Neufchâtel cheese, at room temperature

1/2 of a large carrot, grated, then squeezed inside a paper towel to remove excess moisture

3-4 green onions, green parts only, sliced thin

1 large radish, finely minced

1 stick celery, finely minced

1/2 tsp sriracha

salt and pepper to taste

1 loaf of sliced bread, with each slice cut into a 3″ round

{Toppings}

roasted red bell pepper, drained and diced

yellow bell pepper, diced

black olives, drained, rinsed and diced

Persian cucumbers, sliced thin

green onions, sliced thin

blue corn chips, crushed

Equipment:

round 3″ circle cookie cutter

toaster

Directions:

1. Mix all the filling ingredients together, then place in the fridge to chill until ready to make the sandwiches.

2. Toast the bread rounds. Place some cream cheese filling on the center of each of the bread rounds. Generously place the toppings atop the cream cheese & enjoy!
