Spicy Chai Lava Cakes & A Giveaway!

Happy Valentine’s Day, tea friends! What are your plans on this day of love? If chocolate is a must on V-day, then you’ll definitely want to whip up these Spicy Chai Lava Cakes to share with your sweetie!

These rich, gooey cakes are a snap to make, and have a strong kick of chai to keep your heart warmed and your palette singing. The secret ingredient here is powdered chai mix, the kind that’s super convenient and doesn’t require steeping or boiling. This recipe is just enough for 2 to enjoy. With the addition of a simple powdered chai mix, these soufflé-like cakes are infused with the taste of black tea and exotic spices like cardamom, cinnamon, and cloves. 

I suggest using a robust, dark chocolate to start here (I used extra dark). Chai mix usually has some dried milk incorporated into it, and this will give the resulting cakes a semi-sweet chocolate taste.Serve these decadent Spicy Chai Lava Cakes with Palais Des Thes’ Thé des Amants, otherwise known the Tea of the Lovers. This tea is reminiscent of a chai, but gentler and much more restrained. Best of all, it pairs amazingly well with dark chocolate, the same kind used in these luscious cakes!

Spicy Chai Lava Cakes

Makes 2 cakes. 

Ingredients:

1/4 cup unsalted butter, at room temperature

2 oz. dark chocolate chips

1 egg

1 egg yolk

1/2 tsp vanilla extract

1/4 cup powdered sugar

1/4 cup powdered chai mix

3 Tbsp all-purpose flour

pinch salt

Equipment:

2 ramekins, greased

2 large microwave safe bowls

small whisk

Directions:

1. Preheat the oven to 400 degrees F. In a microwave safe bowl, melt the butter for 30 seconds in the microwave until fully melted. Mix the chocolate chips with the melted butter, then set aside.

2. In another bowl, whip the egg and egg yolk together vigorously. Add the vanilla extract, powdered sugar, and chai mix, then mix all these ingredients together until they are homogenous.

3. Mix the chocolate chips with the butter until they are all melted. Add this mixture to the egg mixture and mix everything together evenly. Whisk in the the flour and salt until just incorporated.

4. Bake the cakes for 10 minutes, then remove from the oven and let sit at room temperature for 1 minute before enjoying.
